My hubby and I spent the Thanksgiving holiday in Atlanta away from family (located in Florida). Unfortunately, Stephen had to work… so to make things special I decided to bake! I normally wait until Christmas to bake my annual sugar cookies… but I couldn’t resist! I found this amazing recipe and decided to give it a go!
- 2 cups all-purpose flour
- 1 teaspoon salt
- ¾ cup + 2 Tablespoons shortening
- 5-6 tablespoons cold water
- 1 (15 ounce) can pumpkin puree
- 1 (12 ounce) can evaporated milk
- 2 eggs
- ⅓ cup brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon ginger
- Whipped cream
- Cinnamon or pumpkin pie spice

The crust was so light and flaky and the pumpkin filling was Oh-So-Good! With the Christmas holiday quickly approaching definitely give this recipe a try!
